Chef De Partie

A Chef de Partie’s role varies within the establishment and the more experience gained within a brigade. A Chef De Partie will have 4 to 7 years experience within a professional kitchen environment and gained profession qualifications from either college or a day release scheme through work normally SVQ accredited.

The Chef De Partie responsibilities in the kitchen will include; daily Mes en Place for a given section, storage of supplies and stock rotation of those supplies. As a Chef De Partie you will be trained by Senior Chefs on each menu item thus improving your knowledge and skill base. Many Chef De Parties will also be responsible for passing on this training to Commis Chefs assigned to their section to help with preparation of the menu.

A Chef De Partie salary is circa £18,000 to £23,000 per annum, depending on experience.
