The Position
 
You’ll be working with local produce where possible, and not so local as well (Scotland doesn’t have the best climate for growing Cocoa…). You’ll be working with seasonal produce and developing the tasting menu as the season goes on. It would be an advantage if you can drive & have access to your own transport, but it is not essential.
 
About You
 
You should have experience in working with chocolate & working with sugar, and generally be able to hold your own on a busy pastry section. You should have a working knowledge of what’s in season and a great underpinning knowledge on Pastry. You should be driven, focused & determined to push on in your career. Previous experience in a Rosette awarded kitchen would be a great advantage, but people with the right skill-set & attitude will also be considered.
