This is an opportunity to work with a renowned first class Chef in a 4/5* boutique Country House Hotel environment. You will be working in the picturesque Scottish Borders within beautiful grounds. Your role will be to manage the F&B operation within this beautiful Hotel.
This hotel offers an intimate formal dining room, a more relaxed bar area and a good sized private dining area. You will be responsible for supervising the service in each area and ensuring the service staff are knowledgeable on the food and wine and adopt your high restaurant service standards. You will operate in a hosting role, ensuring well run service, dealing with enquiries and dinner conversation with guests. You will encounter a good deal of guests who are staying to pursue the local golf, fishing or shooting and there are additionally guests who are there for the gastronomy experience. This role would really suit you therefore if, along with a keen interest and knowledge of fine food & wine, you have an appreciation of the outdoors. 
The other aspects of the role will include assisting the Hotel General manager with day to day operations, with a specific focus on F&B. You will put together monthly business forecasts, stock management,  control staff scheduling, conduct staff training and ensuring health and safety within the Dining areas. 
This role would suit you if you have experience of working in a supervisory role within a high-end, fine dining restaurant. You will relish the opportunity to work with a highly regarded chef and enjoy managing and training a team.
