Sous Chef

A Sous Chef role has various levels within the title from Junior Sous Chef to Senior Sous Chef and is dependant on the size of the brigade.

The Senior Sous Chef role comes into play in vast establishments that have large brigades and are needed to control and delegate commands and company standards set by the Executive Chef. Often the Senior Sous will have 1 or 2 Sous Chefs to assist in day to day operations of the kitchen and its brigade and will cover any absence of the Executive Chef. The Senior Sous Chef salary is circa £23,000 to £27,000 per annum, depending on experience.

The Sous Chef is a more common title for medium sized brigades and will deputise in the Head Chefs absence controlling the day to day operation of the kitchen and its brigade. The Sous Chef is normally the lead cook and is the strongest chef in the brigade and will work as the Sauce Chef or Grill Chef on a day to day basis. The Sous Chef salary is circa £20,000 to £30,000 per annum, depending on the property and standard of cuisine.

Junior Sous Chef is a title given to a Chef that has worked his way through the ranks in the kitchen gaining hands on experience in all sections thus able to cover any section due to absence or holidays with in the brigade. The Junior Sous Chef title will give the chef the opportunity to progress into the management side of the kitchen and will be given basic admin tasks for example daily orders from suppliers and health and safety logs. The Junior Sous Chef salary is circa £19,000 to £22,000 per annum, depending on experience and the property.
