Chilli Jam

 

2kg Red Chillies

500g Caster sugar

1 Large White Onion (Finely diced)

8 Cloves Garlic (Peeled and pureed)

Olive Oil (splash)

 

Prepare the chillies first. Wear gloves, first remove the stem and split the chillies legnthways.

Scrape out the seeds and white pith and discard it.

Continue until all the chillies are done. Chop them into thin slices.

Heat the olive oil in a heavy based pot then add the chopped chillies, onion & garlic and allow to sweat. Stir continuously on a medium heat. 

Do not allow the mix to brown. There should be a separation of liquid, the juices escaping from the onion & chillies. Add the sugar and stir in. 

Continue cooking on a low heat until thickened and has the consistency of jam.
