Onion Marmalade

1.8kg Onions (peeled and finely sliced)
200g Demerara sugar
90ml Sherry Vinegar
60ml Crème de Cassis
20g Salt
Melt the butter in a pan and add the onions
Cook gently for five minutes stirring occasionally
Add the remaining ingredients stir together and allow to simmer for 1½ -2 hours
