A simple recipe for light pancakes. If you've got a sweet tooth, you can add more sugar or if you prefer you pancakes Plain, leave out the sugar. And for a savoury element if thats more your thing, omit the sugar & add some finely chopped chives.


6 Eggs (large)

230g Plain Flour (sifted)

10g Baking Powder

280ml Milk

25g Caster Sugar

½ teaspoon Ground Cinnamon

½ teaspoon Almond Extract

Pinch of salt



Separate the egg whites & yolks

Mix the yolks with the rest of the ingredients to make a smooth batter

Whisk the whites with the salt until they form stiff peaks then fold in the batter slowly, preserving as much air in the mix as possible

Heat a non stick pan with a very thin coating of oil

Pour the batter into the pan in small rounds and allow to cook on a medium heat for approx 2 minutes

If you are adding blueberries or chocolate chips, place them on the uncooked side, then flip quickly and continue cooking until golden brown

Serve with a topping of your choice
