A small aphrodisiac to get you both in the mood for valentine’s night

I have selected a simple but superb recipe to share with you that can be easily put together in minutes to add to the experience of your romantic Valentines evening!

8 fresh west coast oysters
4 shallots - finely diced
4 limes
2 cloves garlic – crushed
2 green peppercorns
2 red peppercorns
50 ml olive oil
Chopped basil – to taste
Chopped coriander – to taste

Start by preparing the oysters. Ask your fishmonger to show you how to shuck the oysters or ask them to do it for you. Keep the base part of the shell for presentation.

Crush the peppercorns in a mortar and pestle.

In a mixing bowl add the finely diced shallots, crushed garlic, zest of 1 lime, juice of the limes, peppercorns and the freshly chopped herbs. Whisk in 50ml olive oil and leave to infuse for 20-30 minutes before using with the oysters.

Arrange the shells on a serving plate and return the oysters to their shell. Just before serving spoon over the marinade to fill the shell.  Please be careful not to do this too soon as the oysters will cook in the lime juice in about ten minutes or so.

Relax and enjoy the rest of your evening I would always recommend a bottle of champagne to go with this recipe!
